2 baking potatoes, fully baked and cooled
2 strips cooked bacon, crumbled
Shredded cheddar
2 large eggs
Green onion, thinly sliced
Salt and pepper to taste
Hollow out a portion of the potato to make a “boat” then microwave 30-45 seconds until slightly warm. Sprinkle bacon and cheese in each potato and top with raw egg. Cover and cook in microwave 30 seconds at a time until egg reaches your desired level of done. Spinkle with salt, pepper, green onion and a little more cheese then dig into your bacon-egg-cheese potato boat!!
