1 lb box small elbow macaroni, cooked al dente and drained
1 red bell pepper, diced
1/2 large english cucumber, diced
1/2 large red onion, diced
5 heaping tbsp mayonnaise
1 heaping tbsp yellow mustard
6 heaping tbsp sweet pickle relish
salt and seasoned pepper to taste
Mix everything together in large bowl….stir well!! Refrigerate overnight. Stir again before serving. If you think it’s to dry after overnight in fridge, stir in a little more mayo and relish.
