8 lasagna noodles1 cup ricotta cheese2 cups mozzarella cheese1 tbsp parsley1 tbsp dry Italian seasoning1 tbsp butter1 lb shrimp peeled and deveined1 smal onion, finely chopped1 clove garlic, minced1 bottle alfredo saucePreheat oven to 350. In a large skillet, melt butter and cook shrimp until they turn pink. Remove shrimp and coarsely chop. Add onion and garlic and sauté 2 minutes until fragrant. Cook noodles in large pot until the are al dente. Once noodles are done, lay noodles flat and let them cool. In a small bowl mix the shrimp, mozzarella, ricotta cheese, parsley, Italian seasoning, onion and garlic. Spread the shrimp/cheese mixture on the noodles and roll. Repeat until all noodles are rolled. Place noodles in a baking dish, seal side down. Pour alfredo sauce on top of noodles. Top with mozzarella cheese and parsley. Bake for 20 minutes.
