1 lb ground beef1 medium yellow onion chopped1 small green pepper seeded and chopped3 cloves garlic minced2 tsp chili powder1 tsp salt1 tsp pepper1 tbsp worcestershire sauce3 medium zucchini cubed2 large tomatoes seeded and diced1/2 c. water1 c. uncooked instant brown rice1 c. shredded colby jack cheeseCook ground beef with onion and pepper in a large skillet over medium-high heat until not longer pink, about 5-7 minutes; drain. Stir in garlic, seasonings, vegetables, water and rice; bring to a boil. Reduce heat, cover and simmer until rice is tender, about 15-20 minutes. Sprinkle with cheese. Remove from heat; let stand until cheese is melted.
