1 block cream cheese, softened
1/2 cup canned pumpkin (not pie filling)
1 cup powdered sugar
1/2 tsp pumpkin pie spice
1/2 tsp vanilla
1 and 1/2 cups graham cracker crumbs
coating
1/2 cup graham cracker crumbs
1 tsp cinnamon
1/4 cup powdered sugar
In a large bowl, beat softened cream cheese, pumpkin pie spice, and vanilla. Mix until fully blended, several minutes.
Fold in graham cracker crumbs until a thick dough forms. Chill in fridge 30 minutes.
In a small bowl, mix graham crackers, cinnamon and powdered sugar for coating.
With a tablespoon, scoop dough into balls and roll in coating mixture.
Place balls on a parchment paper covered cookie sheet. Refrigerate at least an hour before serving.
