2-3 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium zucchinis, sliced into 1/2 inch rounds
1 pint cherry tomatoes, halved
1 red bell pepper, seeded and diced
1/2 red onion, thinly sliced
1 tbsp minced garlic
1/4 cup olive oil
1 tsp dried oregano
1 tsp dried basil
salt and pepper to taste
1/2 cup crumbled feta
fresh, chopped parsley for garnish
Grease a large baking dish with olive oil.
Combine chicken, zucchini, tomatoes, bell pepper, onion, and garlic in a large bowl and drizzle with olive oil.
Add spices and toss well to coat.
Pour into baking dish and bake 25-30 minutes at 400 degrees. Toss once halfway through the baking time.
Once chicken is cooked through, top with feta cheese and bake 5 more minutes. Garnish with parsley.
