2 cups of Plum tomatoes, seeded & diced
11/2 cups of Ripe mango, peeled & diced
½ cup Onion, diced
½ cup Fresh cilantro, chopped
2 tbsp. Lime juice
1 tbsp Apple cider vinegar
1 tsp Sugar
1 tsp Salt, divided
1 tsp Black pepper, divided
2 cloves garlic, minced
4 Salmon fillets (6 oz each)
1 tbsp Olive oil
Prepare your grill. Combine tomatoes, mango, onion, cilantro, lime juice, cider vinegar and sugar in a large bowl. Stir in garlic, half the salt and half the black pepper and set aside. Rub salmon with olive oil and sprinkle with remaining salt & pepper. Place fish on grill rack for 3 minutes on each side or until fish flakes easily when tested with a fork. Top with mango salsa and serve.
