1 & 1/2 lb large shrimp, peeled (and de-veined if you like)
1 package smoked Andouille sausage, thinly sliced
2-3 ears corn, cut into 4 pieces
1 lb baby red potatoes, halved
2 tbsp olive oil
4 tsp Cajun seasoning (use old bay if you prefer)
2 cloves garlic, minced
juice from 1 lemon
sale and pepper to taste
2 tbsp fresh parsley, chopped

Preheat grill. Add potatoes and corn to pot of boiling water and par boil them for a few minutes. Drain and rinse with cold water to stop cooking and drain again in large bowl. Add shrimp, sausage, corn and potatoes then mix in olive oil and add Cajun seasoning, garlic, lemon juice, salt and pepper. Combine well. Cut 4 sheets of foil and divide meat and veggies into equal portions of the foil. Tightly seal foil. Grill 12-15 minutes, turning once. When done garnish with parsley.
