3 small red potatoes, diced
1/4 cup green pepper, diced
1/4 cup red onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1/4 cup precooked, crumbled turkey sausage
3-ounces shredded sharp cheddar
9 eggs
Salt and pepper to taste
1 tsp Italian seasoning
Cover potatoes in plastic wrap on micro safe plate and microwave 3 minutes then set aside. In saute pan, heat olive oil on medium heat then cook green pepper, onion and garlic for about 5 minutes. Stir in sausage to heat and remove from heat then stir in cheese. Spray Pam in a 12-count muffin pan. Spoon the veggie/meat/cheese mixture evenly into a muffin pan. Beat eggs with salt, pepper and Italian seasoning and pour evenly over veggie/meat/cheese. Bake 15 minutes at 375.
