4 sweet potatoes, peeled, cubed, boiled, drained and mashed
1 cup sugar
2 eggs, beaten
1/2 cup butter, melted
1 tsp vanilla extract
1 cup sweetened flaked coconut
1 cup packed brown sugar
1/3 cup all-purpose flour
1 cup chopped pecans
1/3 cup butter, melted
Beat potatoes with sugar, eggs, butter (1/2 cup) and vanilla until smooth. Stir in coconut. Pour into 8×8 baking pan and mix brown sugar, flour, pecans and remaining melted butter then carefully sprinkle over potato mixture. Bake at 350 for 35 minutes.
