1 cup brown rice, cooked according to package
1-16 ounce can kidney beans, rinsed and drained
1 large onion chopped
tbsp olive oil
1-14-1/2 ounce can diced tomatoes and green chilies, undrained
2 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 & 1/4 cups shredded cheddar
2 green onions, thinly sliced
Mix rice and beans in bowl. Saute onions in oil 5 minutes, stir in tomatoes, chili powder, salt and pepper and bring to boil then remove from heat. In 2-quart baking dish (coated with cooking spray) layer 1/3 rice and beans, 1/3 cheese, 1/3 tomato mixture. Repeat twice, cover and bake 30 minutes at 350. Uncover add final 1/4 cup of cheese and bake uncovered additional 5 minutes. You can make this a main course meal by adding some shredded chicken.
