1 lb ground chorizo sausage
1 onion diced
1-green pepper diced
2- cans rotel
1-can black beans, rinsed and drained
1 tsp adobo seasoning
10 eggs
1/3 cup milk
1/2 tsp black pepper
1 1/4 cups shredded cheddar

Brown chorizo with onions and green pepper then drain grease. Stir in rotel, black beans and adobo seasoning and mix well Bring to boil then reduce heat and simmer about 10 minutes. Whisk together eggs, milk and pepper then spray crock pot with Pam. Place 2 corn tortillas in bottom of crock pot, add 1/3 of meat mixture, 1/3 cup cheese and 1/3 egg mixture then repeat for a total of 3 layers. Sprinkle final 1/4 cup of cheese on top. Cover and cook on low 8 hours. Garnish with fresh cilantro and sour cream
