3 cups watermelon cut into 1″ cubes
1 large cucumber peeled, sliced longways and then slice ¼” thick
1 cup blueberries
2 tablespoons red onion finely diced
3/4 cup queso fresco crumbled OR crumble feta
1/2 teaspoon lime zest
2 tablespoons lime juice
1 tablespoon honey
In large bowl add watermelon, cucumber, blueberries, onion and cheese and stir gently. Then with a small whisk add zest, juice and honey. Drizzle over watermelon mixture and toss to coat. Refrigerate one hour and serve.
