1.5-2 lb sirloin steak, cubed into 1 inch pieces, trimmed of fat (you can use pretty much any cut of steak you prefer)
steak seasoning to taste
olive oil
1 bottle Guinness
2 tbsp butter
1 tbsp flour
3/4 cup milk
1 1/4 Gouda cheese, shredded
1/4 tsp paprika
Pour Guinness into medium saucepan, bring to a simmer and reduce until there is about 1/3 cup left, stirring often…be careful not to let it overflow the pan. Season beef with steak seasoning then thread onto skewers, brush with olive oil. Grill over medium-high heat 2-3 minutes per side, brushing with Guinness reduction.
In a small saucepan melt butter, whisk in flour and cook couple of minutes until light brown. Slowly whisk in the milk until thickened to a creamy consistency. Whisk in the Gouda a little bit at a time, making sure it gets incorporated before adding more. Season with salt, pepper and paprika.
