1 box of your favorite pasta, cooked al dente, strained
8-ounce block of feta cheese
2 cups cherry tomatoes
2 cloves garlic, chopped
1/4 cup, plus 1 tbsp olive oil
1 tsp oregano
salt and pepper to taste
lemon zest
several fresh basil leave, chopped
1 lb chicken breast tenders, cut into bite sized pieces
Preheat oven to 415 degrees. In a baking dish add cherry tomatoes, 1/4 cup olive oil, salt and pepper and mix together. Add a block of feta to the middle of baking dish, top with 1 tbsp olive oil and the oregano then sprinkle lemon zest over the whole thing. Bake 30 minutes until tomatoes are roasted and feta is soft-melted. While that is in the oven, heat more olive oil in pan and season chicken with salt and pepper and cook until done. Set aside. When tomato/feta mixture is done, remove from oven and with a fork, smash tomatoes and mix well with feta to make a sauce. Stir in chicken and fresh basil, lastly stir in pasta coating evenly. Enjoy!
