2 russet potatoes, cut into 1/4 inch slices

garlic powder
olive oil
shredded cheddar
green onions, thinly sliced
6 slices of bacon, cooked, drained and chopped
1 tomato, diced
Soak potato slices in cold water for at least 20 minutes (this step is important to pull starch out of potatoes). Dry potatoes, in large bowl add potatoes, about 1/4 cup of olive oil, sprinkle with salt, pepper and garlic powder to taste and arrange slices on a greased baking sheet (single layer). Bake at 400 degrees about 20 minutes and turn each slice then bake another 20 minutes until potatoes are getting a little brown. Layer half of potatoes on baking sheet, sprinkle with cheese, onion and bacon then layer rest of potatoes, cheese, onion and bacon. Bake at 450 degrees about 5 minutes until cheese melts. Transfer to serving platter. Top with more green onions and tomato. Serve with sour cream (add any other toppings and side dips you like).
