1 lb fresh cheese tortellini
1/4 cup olive oil
2 tbsp balsamic vinegar
1/2 tbsp honey
salt and pepper to taste
3/4 cup chopped salami
1/2 cup baby spinach
1/2 cup oil packed sun-dried tomatoes, chopped
1/4 cup grated parmesan, plus a little more for garnish
In salted, boiling water cook tortellini per package instructions, drain and transfer to large serving bowl. For dressing, whisk together olive oil, vinegar, honey, salt and pepper. To bowl, add salami, spinach, sun-dried tomatoes and dressing, toss until well combined. Top with more parmesan.
