1 tbsp Olive Oil
5 Sweet, Mild or Hot Italian Sausage (whichever ones you like best)
3 large Bell peppers cut into strips (I used one green, one red and one yellow for color)
1 large Onion sliced
6 cloves Garlic (minced)
1 tbsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 1/2 cups Marinara Sauce (your favorite jarred)
Heat oil in a large skillet over medium-high heat. Once it’s hot, add the sausage links. Cook for about 2 minutes per side, just until browned on the outside. They will not be cooked inside. Place the links into the slow cooker. Top sausages with the bell peppers, onions, garlic, Italian seasoning, salt, and pepper in a slow cooker. Toss to coat. Pour marinara sauce evenly over the vegetables and sausages. Cook for 5-6 hours on Low or 2-3 hours on High, until the sausages are cooked through. I served over rice and topped with a little shredded mozzarella cheese. Would also be good served over mashed potatoes or noodles.
