
2 Granny Smith apples, peeled, cored and chopped
1/2 cup brown sugar
2 tsp cinnamon
1 tsp ground ginger
1 large egg
1/3 cup granulated sugar
1/4 cup vegetable oil
1/4 cup sour cream
2 tsp vanilla
1 cup all-purpose flour
1/2 tsp salt
Glaze
1 cup powdered sugar
1 tsp vanilla
3 tbsp milk
Preheat oven to 350 degrees. Spray loaf pan with nonstick spray.
In a medium bowl, mix the apples, brown sugar, cinnamon and ginger. Set aside
In a large mixing bowl, whisk together egg, granulated sugar, vegetable oil, sour cream, and vanilla until well combined.
In a separate bow, whisk together flour, baking soda and salt.
Add dry ingredients to wet ingredients. Stir til combines.
Fold in 3/4 of apple mixture. Pour batter into loaf pan and top with remaining apples.
Bake 50-55 minutes until toothpick comes out clean.
Let cake cool about an hour, remove from pan.
For the glaze, in a small mixing bowl, whisk together powdered sugar, vanilla, and milk until smooth. Pour glaze over the fritter loaf before serving.
