
1/2 tsp ground ginger
1 tsp grated garlic
zest from one lemon
juice from half the lemon
2 tbsp dijon mustard
2 tbsp maple syrup
1 tbsp chopped fresh thyme (plus more for garnish)
1/2 tsp smoked paprika
2 tbsp olive oil
salt and pepper to taste
4 thin boneless, skinless chicken breasts
2/3 cup finely chopped pecans
Preheat oven to 350 degrees. Place a wire rack onto a baking sheet and lightly coat with cooking spray.
In a bowl, whisk together ginger, garlic, zest, lemon juice, mustard, syrup, rhyme, paprika, olive oil, salt. Reserve 1/4 cup of this mixture for later.
Pat chicken dry, season with salt and pepper. Coat chicken with wet mixture. Press pecans onto chicken. Place on the baking rack. Bake 15-20 minutes.
