1 1/4 lb ground beef
1 15 oz can tomato sauce
salt and pepper to taste
8 oz egg noodles
1/2 cup sour cream
1 1/4 small curd cottage cheese
1/2 cup green onions, thinly sliced
1 tsp dried Italian seasoning
1 cup grated cheddar cheese
Brown the ground beef in a large skillet. Drain the fat, then stir in tomato sauce, salt and pepper. Simmer while prepping the rest of the dish.
Cook the egg noodles until al dente. Drain and set aside.
In a medium bowl, combine sour cream, cottage cheese, Italian seasoning, green onions, and more pepper. Add noodles and stir well.
Spray a baking dish. To assemble the dish: add half the noodles, then half the meat mixture, then half the cheese. Repeat.
Bake, covered with foil for 10 minutes. Remove foil and continue baking another 10 minutes until all the cheese is melted.
