6 large hard boiled eggs, peeled and quartered
3 ounces cream cheese, softened
1/4 cup plus 2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
2 teaspoons yellow mustard
1 teaspoon garlic powder
1 teaspoon Sriracha sauce, or to taste
salt and pepper to taste
thinly sliced green onion, for garnish
paprika, for garnish
Combine hard boiled eggs, cream cheese, mayonnaise, vinegar, mustard, garlic powder, Sriracha, salt, and pepper in a food processor. Pulse or blend until you get a smooth consistency, about 30 to 45 seconds. Adjust seasonings to suit your taste. Spoon the dip into a bowl, garnish with green onions and a sprinkle of paprika. Store in an airtight container in the fridge. Serve with carrots, celery, crackers and/or pretzels.
