1¾ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
½ cup butter, softened (1 stick)
1 cup granulated sugar
1 teaspoon lemon zest
1 egg
1½ cups unsweetened applesauce
½ cup raisins (optional)
½ cup walnuts (optional)
Preheat oven to 350°F.
Grease an 8×8-inch baking dish with baking spray.
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In another bowl, cream the butter, sugar, and lemon zest until light and fluffy.
Add the egg and beat until smooth.
Stir in the applesauce, then stir in the dry ingredients.
Finally, stir in the raisins and walnuts. (if using)
Pour into prepared pan.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Let sit for 10 minutes then carefully remove from pan and cool on a rack.
