30 oz frozen shredded hash browns, thawed
2 cups ham, cubed
1/4 cup onion, chopped
1 can creamed corn
2 cups shredded cheese, divided
4 eggs, beaten
1 tsp garlic powder
salt and pepper to taste
1 tube biscuits
green onion, thinly sliced for garnish
In a bowl combine hash browns, ham, onion, corn, 1 cup cheese, eggs, garlic powder, salt, and pepper. Transfer to a greased 9 x 13 casserole dish. Bake at 350 degrees 10 minutes. Remove from the oven. Tear biscuits into pieces and sprinkle over the top of the casserole. Sprinkle the remaining cheese on top. Bake an additional 15 minutes until the casserole is cooked through, the cheese is melted, and the biscuits are golden brown. Let sit for 5 minutes. Serve topped with green onions.
