12 slices of bologna
2 tbsp butter
1 medium onion, chopped
4 cups mashed potatoes
1 & 1/2 cups shredded sharp cheddar
4 green onions, thinly sliced
Grease 8×8 casserole dish…fry the bologna until it starts getting browned, remove and set aside. Melt butter in pan, add onions and cook til softened. Stir onions into mashed potatoes. Layer the casserole: 1/3 mashed potatoes, 4 slices of bologna, 1/2 cup cheddar, repeat 2 more times. Bake, uncovered 20 minutes or until cheese is bubbly. let sit 5 minute, sprinkle with thinly sliced green onions and serve.
