2 pounds raw large shrimp, peeled, deveined (tails on or off)
salt and pepper, to taste
1/3 cup melted butter, divided (about 5 tablespoons solid butter)
1/4 cup lemon juice
4 cloves garlic, minced
2 tablespoons chopped fresh parsley
1/3 cup panko bread crumbs
1/3 cup grated parmesan cheese
1/2 teaspoon, or more, to taste
fresh chopped parsley, for garnish
lemon wedges, to serve
Preheat oven to 425˚F. Place shrimp in a baking dish and season with salt and pepper then toss it. Melt butter, then whisk in lemon juice, minced garlic and chopped parsley; pour half of the garlic butter mixture over shrimp and stir the shrimp around until well combined. Arrange shrimp in a single layer inside the baking dish and set aside. In a small bowl combine the remaining melted butter, panko crumbs, parmesan cheese, and paprika; mix well. Sprinkle the crumb mixture over the shrimp and bake in the oven for 12 minutes, or until bubbly.
Set oven settings to BROIL and cook for another minute or two, or until the top is golden and crispy. then remove from oven. Garnish baked shrimp with chopped parsley and serve with lemon wedges.
