for the salad
1 cup uncooked Quinoa, prepared by package instructions and cooled
1 large english cucumber, chopped
1 package cherry tomatoes, halved
1/2 red onion, finely chopped
1 red bell pepper, chopped
1 container crumbled feta
1/3 cup chopped fresh parsley
for the dressing
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tsp honey
1 clove garlic
minced salt and pepper to taste
1/2 tsp crushed red pepper flakes
1 tsp oregano
In large bowl, combine all salad ingredients. In small bowl combine dressing ingredients, whisk well. Pour dressing over salad mixture and toss until salad is coated.
