Creamy Roasted Butternut Squash, Penne, Sausage & Spinach

2 cups butternut squash, peeled, seeded and cubed
1 tbsp olive oil
salt and pepper to taste

Preheat oven to 400 degrees and roast squash on a baking sheet about 25 minutes, toss about halfway through the cooking.

4 Italian Sausages, casings removed
1/2 onion, chopped
1 tbsp olive oil

In a skillet, heat olive oil and cook sausage and onion, breaking up sausage as it cooks. Drain fat.

1 tbsp olive oil
2 tbsp minced garlic
6 oz fresh spinach
1 cup half and half
1/2 cup shredded parmesan
1/4 tsp salt
1/4 tsp pepper

In large skillet, heat olive oil, add garlic and spinach. Cook, stirring often until spinach wilts. Add half and half, bring to a brief boil the reduce to a simmer. Add parmesan and stir well. Cook on low until parm is incorporated. Stir in salt and pepper, sausage and onion mixture and squash. Cook 8 oz of penne pasta until al dente. Drain pasta, add to skillet and stir well.
