3 cups cooked, shredded or chopped chicken
1/2 cup thinly sliced red onion
1 english cucumber, shredded
1 cup plain greek yogurt
3 tbsp fresh dill, chopped
1 tbsp fresh mint, chopped
1 1/2 tbps lemon juice
1 tbsp olive oil
1 tsp minced garlic
1 tsp salt
1/2 tsp black pepper
Using paper towels, squeeze the shredded cucumber to eliminate excess liquid.
In a large bowl, mix together the drained cucumber, yogurt, dill, mint, lemon juice, olive oil, garlic, salt and pepper. Mix until fully incorporated.
Add chicken and red onion and mix until well coated. Chill at least an hour in fridge before serving. Serve as sandwich, on pita or on top of a green salad.
