olive oil
1 lb lean ground turkey (you can use ground beef if you prefer)
1 medium onion, diced
2 cups salsa
1 15-ounce can black beans, rinsed and drained
1 15-ounce can corn, drained
1/4 cup Italian dressing
2 tbsp taco seasoning
1 tsp ground cumin
1/2 cup fresh cilantro, chopped
6 flour tortillas, 8-inch
1 cup reduced-fat sour cream
1 cup shredded Mexican blend cheese
optional toppings: shredded lettuce, diced tomatoes, more cilantro
In a large skillet, heat olive oil, add turkey and onion. Cook until turkey is cooked through and no longer pink. Drain.
Stir in salsa, beans, corn, dressing, taco seasoning, cumin and cilantro. Mix well and simmer for a few minutes to warm through and bring the flavors together. Remove from heat.
Spray a 11×7 baking dish with cooking spray. Place 3 tortillas in the baking dish. Layer half the meat mixture, half the sour cream and half the cheese. Repeat with another layer.
Cover with foil and bake at 400 degrees for 25 minutes. Remove the foil and bake another 5-10 minutes until cheese is melted and starting to bubble. Remove from oven and let sit 10 minutes.
Slice into squares and serve with preferred toppings.
